4 Easy and Elegant New Years Appetizers

Herbs de Provence Marinated Feta Appetizers

ingredients

  • 5 oz. block of firm feta cheese
  • 1 tsp. fresh lemon zest
  • ½ cup small green or nicoise olives
  • ¼ cup Stonewall Kitchen Herb de Provence Dipping Oil

directions 

  1. Cut feta cheese into ½-inch cubes.
  2. Combine feta cheese cubes, lemon zest, olives and Herbes de Provence Dipping Oil in a small bowl. Cover and marinate several hours, or up to overnight.
  3. Skewer marinated feta cheese cubes and olives onto toothpicks. Drizzle with marinade and serve.

 

 

Shrimp and Chinese Vegetable Spring Rolls 

 

ingredients

  • 1 small can cooked shrimp
  • 1 bunch scallions
  • 1 small head napa cabbage
  • 1 head baby bok choy
  • 1 red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 lb. sugar snap peas
  • 1/4 cup rice wine vinegar
  • Sriracha chili sauce to taste (or any other hot sauce)
  • 1 Tbsp. soy sauce
  • 1 Tbsp. oyster sauce
  • 2 Tbsp. Cornstarch
  • 1/4 cup cool water mix well to make slurry
  • 1 package spring roll wrappers
  • 1 bottle of Stonewall Kitchen Roasted Garlic Peanut Sauce

directions 

  1. Julienne all vegetables. Combine all other ingredients. Toss with vegetables to coat.
  2. Peel 1 wrapper from stack, being careful not to tear it. Cover remaining wrappers so that they do not dry out. Lay wrapper on counter in front of you so that it looks like a diamond.
  3. Place 1/2 cup (approx.) of filling on the bottom half of wrapper.
  4. Pull bottom corner up to the middle, rolling it around the filling, fold in sides, hold in place, using your free hand, dip a couple of fingers into the cornstarch slurry.
  5. Moisten top corner of wrapper with slurry. Finish rolling, sealing the seam.
  6. Repeat with remaining wrappers & filling.
  7. Fry in hot oil to cover until golden brown. Drain on paper towels.
  8. Serve with Stonewall Kitchen Roasted Garlic Peanut Sauce for a dipping sauce.

Old Farmhouse Red Relish & Swiss Cheese Ball

Serves 6-8

ingredients

  • 8 oz. Cream cheese, softened
  • 1/2 cup Stonewall Kitchen Old Farmhouse Red Relish
  • ¼ tsp. Garlic salt
  • 1 ½ cups Swiss Cheese, shredded
  • 2 Tbls. fresh parsley, chopped
  • 2-3 Tbls. coarsely ground pepper or 1 cup finely chopped nuts, or 1 additional cup finely chopped fresh parsley

directions 

  1. In a mixing bowl, beat cream cheese on medium speed, scraping bowl sides down as needed, until cream cheese is smooth.
  2. Add Old Farmhouse Red Relish and garlic salt. Continue beating until smooth.
  3. By hand, stir in shredded cheese and parsley.
  4. Refrigerate at least 2 hours. Shape into log or ball and roll in ground pepper, nuts or fresh chopped parsley to coat. Keep refrigerated until ready to use.
  5. Serve with your favorite Stonewall Kitchen Down East crackers.

 

 

Fig and Walnut Butter with Blue Cheese in Fillo Cups 

 ingredients
  • 1 package of fillo cups (Athens or The Fillo Factory brand)
  • 5 oz. Blue cheese
  • 1 jar Stonewall Kitchen Fig and Walnut Butter
  • 2 Tablespoons Brandy or Cognac
  • ¼ cup chopped walnuts
  • Freshly snipped chives for garnish

directions 

  1. Preheat oven to 350°.
  2. Mix Stonewall Kitchen Fig and Walnut Butter with the Brandy or Cognac.
  3. Arrange the fillo cups on a lined baking sheet.
  4. Place a small square of cheese snugly in the bottom of each cup.
  5. Top with approximately 1 teaspoon of Butter mixture.
  6. Sprinkle with chopped walnuts. Bake for 10 minutes, or until lightly browned.
  7. Allow to cool 10 minutes before serving. Place on an attractive serving platter and garnish with chopped chives.

When Irish Republic owner, Roger Baldwin, began developing his franchise strategy he wanted a name that was authentic and reminiscent of Irish culture. After considering a variety of options, Baldwin decided on Irish Republic Public House. He said, “I wanted a name that means exactly what it is, an Irish bar for the people. In Ireland, a public house is a place that serves drinks and is a community establishment, a people’s bar. That’s what I want Irish Republic to be.”

Baldwin traveled through Ireland on a quest to identify authentic traditions and influences that he could incorporate into the concepts for Irish Republic. Returning home inspired and ready to pursue his dream of making Irish Republic a household name, he began developing design elements, a new logo, uniforms and the slogan, “Pub Fare, Sexy Flair.”

When asked about the benefits of franchising with Irish Republic rather than starting a pub concept from scratch, Baldwin replied, “My business concept offers a proven strategy with 30% growth each year and name recognition. Owner/operators can rely on a 24/7 support system with training programs, policies and guidelines for operations. I’ve also spent many years building relationships with restaurant vendors and alcohol distributors, relationships that an owner/operator would benefit from.”

With 10 years experience in law enforcement, causes that impact police and fire families hold a special place in Baldwin’s heart. His passion is expressed through charitable donations and the support of patrons who decorate the pub walls with dollar bills, quotes and hand written notes. This is a tradition that Baldwin hopes will continue at the Irish Republic franchise locations.

Even though the brand is changing, the menu will still feature local favorites like fish and chips, meatball bangers, corned beef hash and shepard’s pie. Irish Republic expanded their menu to include new options, faster lunch service and 35 beers on draft plus 20 brands of bottled beer. The service staff are stepping it up a notch adorning black kilts with logo tanks and high black socks for a dramatic, bold and sexy look. Irish Republic is currently recruiting models to appear in advertising and promotional materials.

El Zocalo: DJ Adrain will be take you into the New Year mixing musica latina/cumbias, Top 40, Old School, Hip-Hop and R&B. There will be fireplaces and heaters on the patio. $20 per person, includes hors d’oevres, party favors and tequila toast at midnight. Chandler residents already know El Zocalo Mexican Grille has a wonderful outdoor seating area, but North Valley dwellers deserve to experience it, too. Really more like a whole other world, the patio at El Zocalo is a courtyard area filled with shade trees, fountains, murals, and interesting artifacts that add to the Mexican flair there. There’s often live music on weekend nights, and sometimes even dancers, but we think this is a great spot for a lunch of hearty chile rellenos and margaritas on lazy afternoons.
